Guillaume Roget,
a Michelin-starred chef, on the Ciboure waterfront
A professional sommelier, Guillaume Roget started his career at the Château de Brindos before joining the restaurant “Chez Ruffet”, run by two-starred Stéphane Carrade, as head sommelier. In 2006, at 23, with his best friend he set up his own restaurant— La cabane du pêcheur (The Fisherman’s Hut) — in the fishing port in Hendaye. He offered home cooking already focusing on seafood. This decisive phase of his career transformed him into an entrepreneur. The adventure was to end 7 years later.
In 2014 he joined the restaurant Le Brouillarta as a sous-chef before taking over the kitchen the following year and becoming the manager of the restaurant. One thing led to another, he was tempted by more elaborate cooking, supported by a faithful clientele until, in 2019, he obtained a prestigious Michelin Guide star. 2021 saw the opening of a new chapter with the creation of the restaurant Ekaitza, and in 2022, the chef received the star again, then the second star in 2025.
