Run by a Michelin-starred chef, Ekaitza is situated on the quayside of the marina in Ciboure, very close to Saint-Jean-de-Luz and its fish market. Understandably focused on seafood, the dishes proposed by Guillaume Roget are based on market ingredients which change with the seasons. Emulsions, sauces and cooking juices are a regular factor in his dishes and provide a real treasure trove of flavours. The ingredients speak for themselves and are highlighted by brilliant cooking mastered to perfection.
