The wine list

In Ekaitza, the wine list is the result of a constant dialogue between the chef Guillaume Roget and the sommelier Maxime. Based on his experience as a head sommelier, Guillaume provides a precise vision of which wines to serve with what, whereas Maxime, free to choose, composes a lively, sensitive and committed wine list. Every two months, about ten wines inspire the creation of new dishes, giving birth to an experience in which food and wine go together perfectly. Between wine from well-known vineyards and independent winegrowers, each bottle has a story to tell and makes the experience of the dish linger on.
